Argentario Celebrates the Flavours of Autumn with Series of Tuscan Dining Experiences

Olive oil from trees beside the fairways, Maremma beef and a November wild boar feast: the Italian Open venue lines up three themed dinners before turning to New Year’s Eve.

  • Argentario opens a series of Tuscan dining evenings with an Olive Oil night on October 17.
  • A Maremma’s Finest evening follows on October 24, with a Wild Boar Feast on November 7.
  • New Year’s Eve dinners will be served at both Dama Dama Restaurant and the Club House Restaurant.

Argentario Golf & Wellness Resort, the Monte Argentario property that hosted the 2025 Italian Open, is holding a series of themed dinners this autumn built around the cooking of Tuscany and the Maremma. The menus combine organic fruit, vegetables and honey grown on the estate with produce from local suppliers and seafood from the nearby coast.

The kitchen is led by Executive Chef Emiliano Lombardelli, who was born on Monte Argentario and reworks the region’s classic recipes alongside dishes of his own. The resort’s Dama Dama restaurant is listed in the prestigious Gambero Rosso Guide 2026.

“I like to offer enticing and, above all, delicious dishes. The inspiration comes from this extraordinary territory that I was fortunate enough to grow up in,” said Lombardelli.

“Thanks to its climate and geography, Maremma is a generous treasure trove of extraordinary raw ingredients from fish and meat to farm produce and aromatic herbs that offer a chef the finest tools to create amazing dishes.”

What’s on the menu?

The series opens tomorrow with the Olive Oil evening, timed for the harvest from the resort’s centuries-old olive trees, some of which grow beside the golf course. The olives are pressed into organic extra virgin olive oil that the kitchens use all year and serve with homemade bread and pinsa.

The evening starts with traditional Tuscan appetisers and bread with black kale and cannellini beans. Pasta with cured pork cheek comes next, followed by pork tenderloin with Tuscan-style liver and olive oil mashed potatoes. Dessert is olive oil biscuits with pumpkin and chestnuts.

Maremma’s Finest on October 24 begins with local aged cheeses and cured meats. Maremma beef tartare follows, then ricotta-filled pasta from Manciano and padellaccia, a rustic pork dish. Ricotta cake, persimmon jelly and chocolate close the meal.

The Wild Boar Feast on November 7 marks the Tuscan hunting season. The menu runs from wild boar cured meats and a terrine with spiced brioche and pickled vegetables to pappardelle with juniper and a white wild boar ragù. The main course is slow-braised wild boar with herb-infused polenta.

“We are very proud of the talents of our chef, Emiliano, and his team in the kitchen here Argentario Golf & Wellness Resort and we are keen to promote the Resort as a top destination for delicious cuisine alongside our golf and wellness,’ comments Augusto Orsini, owner of Argentario.

“Autumn is the perfect season to host these themed evenings thanks to the variety and abundance of produce at this time of year and at a time when the Resort is a little quieter after the busy summer.”

Tastings and classes

Outside the themed nights, the resort runs group cooking and cocktail classes throughout the year, along with olive oil, wine and spirits tastings. Sommelier Nicola Alocci leads the wine sessions. He runs a cellar of well-known Tuscan labels, smaller local producers, and biodynamic and natural wines.

New Year’s Eve

Lombardelli’s team then moves on to New Year’s Eve, with celebration dinners at Dama Dama and the Club House Restaurant. The menus include oysters, cured meats, scallops, king prawns and beef fillet. After midnight come the traditional Italian New Year dishes: cotechino, zampone, lentils and grapes.

Dessert is a house panettone. Pastry Chef Filippo de Bernardi and Lombardelli choose the ingredients themselves, including the natural yeast. As in previous years, the night ends with a firework display and a DJ set.

On the course

The estate covers 80 hectares and includes a five-star hotel, the PGA National Italy certified golf course and the Argentario Golf Villas. The club was the first course in Italy to receive BioAgriCert certification for using only natural maintenance products, and it takes part in the Italian Golf Federation’s Committed to Green programme. More recently, 888 photovoltaic panels have been fitted to the roofs of the hotel, club house and garages. Guests get around the estate on golf carts, bicycles and e-bikes, or on walking and jogging trails.
